With gloddesta'r Christmas is over it feels like everyone is now some sort of diet or detox, well I certainly do not. Of course I've stopped eating chocolate five times a day and try to eat a few more vegetables than I did for the festival, but I do not deprive myself of going from what I like, and so the bakery continues. Actually I expected and the baby here insist cakes so who am I to say no.
To be honest there are enough miserable January without having to live on green smoothies alone. Directing cubby with rising need to get to work early after lengthy holiday, the days are short and the weather is unhealthy, cubby so they need something to cheer someone.
I'm happiest in the kitchen, and so this weekend with the wind roaring outside and the rain hits the windows fierce dessert that we decided to make as big hug on a cold day, the dates and ginger cakes here, with toffee sauce. They are sweet and rich with warm ginger cubby chic, perfect dessert to stroke the soul, but that is sure to scare anyone on a diet!
I've done the small bundt cakes here in tins as they are shaped so attractive to cakes with no effort from you, but if you do not own a muffin tin cans such a routine will suffice as well. One lower tip you use canned bundt is dedicated for use baking cubby spray oil to lubricated, it will go to every nook and corner is easier than petase're using butter.
100g unsalted butter cubby
Preheat oven to 180 C / fan 160 C / gas mark 4.
To make the toffee sauce, place all ingredients in a saucepan and heat gently until the butter melts. Then build up heat and boil for a few minutes until it is thick enough.
